Weddings are always emotional milestones — but when you’re trusted with more than the food, and asked to help orchestrate the entire experience, it becomes a true honor. Just a week ago, I had the pleasure of being not only the Private Chef, but also the event coordinator for a spectacular wedding held in Balotești, near Bucharest. A celebration with 500 guests, a luxurious tent, a curated menu, and unforgettable energy.

From Tasting to Table – A 14-Month Journey

Gina and Laurențiu first reached out to me over 14 months ago, eager to plan something exceptional. From the first discussion, they made it clear — they wanted this wedding to reflect not just love, but also elegance, authenticity, and culinary artistry.

One month before the big day, we held a private tasting session, which helped shape their final menu. Their choices revealed a deep appreciation for refined textures, bold combinations, and a balance between modern and traditional cuisine.

Planning Beyond the Plate

This time, my role expanded well beyond cooking. I sourced and coordinated:

  • A fully equipped wedding tent for 500 guests

  • Flooring, lighting, luxury toilets with sinks

  • Furniture, tableware, decorative elements

  • Staff coordination, logistics, and kitchen setup on-site

The Menu: Sophisticated, Seasonal, and Thoughtfully Curated

Appetizer – Modern & Extravagant Plating

  • Octopus carpaccio

  • Smoked salmon mousse

  • Goat cheese & spinach roulade

  • Smoked duck breast with cranberry chutney

  • Mediterranean shrimp salad

  • Veal ballotine with truffle and raspberry gel

Warm Dish

  • Seared sea bass

  • Parmesan butter risotto

  • Garlic asparagus

  • Classic Meunière sauce

Main Course – A Nod to Tradition

  • Mixed sarmale: 3 cabbage leaf rolls, 2 vine leaf rolls

  • Crispy bacon, hot pepper, sour cream & polenta

Final Course – Refined & Comforting

  • Sous-vide pork tenderloin

  • Chicken roulade with Camembert

  • Truffle mushroom sauce

  • Dauphinoise potatoes & fresh Asian salad
